The email application on the iPhone has a default signature for all outgoing messages of "Sent from my iPhone" which is convenient on your first day of iPhone ownership since this is likely the email you'll send to people first. When they new wears off and you are sending emails for reasons other than bragging rights, you'll probably want to remove or change the signature.

To change the email signature on the iPhone, tap the Settings icon on the Home screen, then the Mail button on the main settings screen. You'll see a screen like this:



Scroll down toward the bottom and tap the Signature button (where the big red asterisk is on the image above) and the signature editor will slide in as shown below:



On this screen you can delete or edit the existing signature text. When you have it the way you like it, you may leave the editor screen by any means you like. Tapping the Mail button on the top right will return you to the other mail settings and tapping the Home button (below the screen) will take you to the Home screen.

At the time of iPhone release, there is only one signature on the iPhone so it will be used with all of your email accounts. A separate signature for each account would be a great addition in a future update (hint, hint, nudge, nudge).
